First Timers: Open Farm Week 2018

This is our 4th year of Open Farm Week events and every year we see new faces visiting and new farms participating. This year brings a great mix of first-timers to Open Farm Week. From  Mozzarella Making at Bread & Butter Farm in Shelburne to a behind the scenes tour of Vermont Cranberry Company in East Fairfield to a farm-to-table brunch at North Meadow Farm in Manchester center, visit these new places and meet your neighbors.

 


 

Monday, August 13th

Bread & Butter Farm, Shelburne

Mozzarella Making 101

6:00 pm |Join Bread & Butter Farm for the second round of Mozzarella Making during Vermont Open Farm Week! This class is anything but cheesy. No, really, this class is the “whey” to go! All jokes aside, if you’re looking to up your cheese game–look no further! During the class, participants will be guided through a recipe for making traditional mozzarella cheese. Mozzarella is a “quick” cheese, meaning participants will get to enjoy tasty samples at the end of the evening! Zero previous experience or knowledge required. This class will take place at Bread and Butter Farm in Shelburne and will be led by Phoebe Tucker, an educator, artist, and enjoyer of all thing dairy. 12:00 pm – 5:00 pm | This is Vermont Cranberry Company’s first time participating in Open Farm Week.  Go behind the scenes with a tour of their working Vermont cranberry bog and processing center, and buy delicious seafood from Bobbers Fresh Seafood Truck!

Open House at Cobb Hill Cohousing and Cedar Mountain Farm

4:00 pm – 7:00 pm | Stop on by to say hi, have a tour of an eco-village, see how they grow shiitake mushrooms, pet an Icelandic lamb or Jersey calf, see the Fjord draft horses, check for eggs in the chicken coop, and taste cheese and maple syrup.  Taco’s Tacos from nearby New Hampshire will be on-site with a food truck and delicious tacos featuring Cedar Mountain Farm beef and veggies.

Blue Ledge Farm & Fairy Tale Farm, Salisbury & Bridport

Tour Blue Ledge Farm with City Market

10:00 am – 3:30 pm| Join the folks at City Market for another summer farm tour during Vermont Open Farm Week! You will visit Blue Ledge Farm in Salisbury where you’ll meet their goats and do some cheese tasting. Then, you’ll head over to Fairy Tale Farm where you get to see their sheep, try some more cheese, and enjoy some delicious gelato from the farm! Light snacks will be provided but participants are encouraged to bring a brown bag lunch (There will be a cooler). Participants should meet at the downtown City Market at 9:45 am, where you’ll take a van and travel as a group to each farm. This tour is a great opportunity to experience some great local products, enjoy the Vermont scenery, and appreciate our hard-working farmers. Participants should arrive early, the group will be leaving City Market promptly at 10:00 am.

Cheesemakers profile: Boston Post Dairy

 Boston Post Dairy is a pretty busy place , between keeping up with the demand of cheesemaking, attending and winnings awards at the American Cheese festival , participating in Open Farm Week and getting ready for the Vermont Cheese Festival, it is never a dull moment. So we feel so very lucky that Anne Doe was able to take the time out of her schedule to chat with us about cheesemaking at Boston Post Dairy.  


How did Boston Post Dairy get started in cheesemaking?

Susan was making goat milk soap and I was doing specialty maple products out of our home kitchens and attending farmers markets, and craft shows. We even held our own craft show.  Our parents, Robert & Gisele attended one of the events and couldn’t believe the great turn out. Dad said, “you girls need a store!” We just smiled. A few years later our parents purchased the Boston Post Dairy and gifted the barn and grazing fields to us.  We had a meeting to discuss how to make the business profitable since we knew we would need more than the soap and maple products to run a store. Our sister, Theresa had goats, so we decided we should make goat milk cheeses. Susan and I attended the VIAC Vermont Institute for Artisan cheeses at UVM to learn the process. Thus began our cheese making career!  We started making Chevres, and took a medal for our Onion Dill Chevre the very first year we made cheese. We started making hard cheeses in the fall of 2011, taking our first medal in 2012 with our Eleven Brothers Goat milk cheese!

Do you have a favorite cheese?  

Anne’s favorite is Très Bonne. (this is a  goat milk gouda style cheese) Cute little story on how Très Bonne got its name.  We were tasting our very first batch, and we kept saying this is good, this is very good!  Our mom was working in the soap room and said in French c’est Très Bonne! “French for Very good!”, And that’s what we named it!   My favorite is Eleven Brothers (a washed rind Tomé style cheese) This was our first hard cheese, and our top seller, with Très Bonne close behind.  We named it Eleven brothers, because we have Eleven brothers, and that was hard!!! So was making our first hard cheese, they all turned out great, the brothers, and the cheese so we named it Eleven Brothers.

What is a typical day of cheesemaking?  

Typical Cheese day, my niece Sally and I arrive at 5 am, to pump the milk from the barn to the cheese plant.  I take care of all the steps from there; pasteurizing, adding cultures, adding rennet, cutting, cooking the cheese.   Patty and usually one of my nieces will help to hoop the cheese. We then turn the cheese in the molds and press it. The clean up process is usually done by 4 pm.  The cheese is turned 5 times, which requires Patty to come back at 7 pm, to do the evening flip. The following day the cheese is removed from the molds, & brined.   Did you know cheese making is around 70-75% cleaning and sanitizing!

What comes first when developing a new cheese?  

I went to a class that said in order to make a good cheese, it first has to be something you yourself like!  We like to kick ideas back and forth when developing a new cheese. When we came up with the recipe for Gisele, we were looking at Appenzeller cheeses.  I knew I couldn’t make the same cheese since it was Country and cow specific. However we came up with a very tasty Alpine cheese, that is finished with a spiced Apple Cider wash.  It is a blend of 80% Cows milk & 20% Goats milk. We named it after our Mom, who is always helping behind the scenes but doesn’t want any recognition, so We named a cheese after her, and created a pink label, which is her favorite color!

What is one of the most challenging aspects of being a cheesemaker?   

For us in Enosburg Falls, Vermont.  Distribution. Also making cheese is very labor intensive.  It’s a good work out. When we make curds, we call it our “curdio” workout. 😉

Which Vermont cheesemakers do you find inspiration from?

 I couldn’t name just one cheesemaker.  ALL cheesemakers are different and each have their own specific ideas and processes.  I have never met a cheesemaker who I didn’t learn something from!!

What is one of the most rewarding aspects of being a cheesemaker in Vermont?

Our parents taught us that if we put our mind to it, we could do anything!  We had no idea what we were doing when we decided to make cheese. We took the classes, 2008-2009, then the goats started kidding in March 2010.  We didn’t have the cultures, we didn’t have the right cheesecloth, we just kept going forward, one slow step at a time. We wondered how our cheeses would compare to all the other wonderful artisan cheesemakers so then we decided to enter our cheese in competitions! We loved the fact that the judges put comments on the scoring sheets.  That helped us take a good cheese, to a great cheese! We are honored and humbled to be included among all the great Vermont Cheesemakers!

The basics of foraged plant medicine will be covered with an opportunity to make a salve for farm cracked hands, topical itch spray and/or poultice and rejuvenating tea blend. Guided by Luna Collins,  you’ll learn how to make your very own blueberry jam! An informal mid-summer potluck accompanied by local music will commence post jam-workshop. Come for a part of the afternoon/evening or stay for it all. Potluck and music from 5:00 pm – 7:30 pm. You must pay for your blueberries by weight at the farmstead. The basics of foraged plant medicine will be covered with an opportunity to make a salve for farm cracked hands, topical itch spray and/or poultice and rejuvenating tea blend. The emphasis in this workshop is to use the wild plants around the cultivated community farm to make remedies that help with outdoor activities. Cost to Attend is Sliding Scale, $5- $15. Join them for their weekly scheduled Community Work Day from 9-11am for cultivation fun in the fields. In addition to Community Work Day hours, they will have garden activities planned for children in their Education Garden from 9:30-11am. Explore veggie life, hold a chicken, practice garden yoga and explore plant wonders. An informal tour of Smokey House Center will begin at 11 am. 2018 Open Farm Week Events in Washington & Lamoille Counties

Monday, August 13th

Lareau Farm/American Flatbread Restaurant Garden, Waitsfield                                          Storytime at the Farm | 10:15 am – 11:00 am | Join Anna, Joslin Library’s Children’s Librarian (and Lareau Farm Garden helper!), for a farm-themed story time. While you’re here, enjoy a “storywalk” through the garden created in partnership with the Kellogg-Hubbard Library! The storywalk will be open throughout Open Farm Week. Free.

Thursday, August 16th

Sandiwood Farm, Wolcott
Pedal to Plate lunch with Lamoille Valley Bike tours | 11:00 am – 3:00 pm | Join us for an afternoon of fun, food and adventure!  Cruise out of Johnson by E-bike for a scenic ride along the Lamoille Valley Rail Trail to the Morrisville Oxbow Park where you will be shuttled by Stoweflake taxi up to beautiful Sandiwood Farm in Wolcott.  Guests will receive a tour of the charming farm, walk the majestic gardens, meet some furry friends and enjoy a delicious on-site garden inspired meal. Must register in advance with Lamoille Valley Bike Tours at https://www.lamoillevalleybiketours.com/specialty-tours. $75 with E-Bike, $45 with your own. $25 for just lunch and tour no bike needed. Limited space available.

East Hill Tree Farm, Plainfield                                                                                              Lessons from the Masters|10:30 am – 12:00 pm | Come see how we have worked to incorporate concepts from ‘The Lean Farm’, ‘The Market Gardener’, ‘The Holistic Orchard’ and others into our organic nursery business and homestead. The workshop will include tour and discussion of various elements on the farm, come prepared to be outside.

Saturday, August 18th

Sandiwood Farm, Wolcott                                                                                                              Farm to Fork Grand Buffet with Movie and Mobile Bar | 6:00 pm | In conjunction with Open Farm Week & Kingdom Farm & Field Days, a family friendly dinner buffet event with movie! A unique and tasty buffet with farm grown and other local sides and of course dessert. A great time to gather with friends, family, meet new interesting people while watching an amazing sunset around a fire. This special buffet will also feature a movie. Come for a memorable, old time Vermont evening, dress for the weather. Tell your friends and family, an authentic culinary on farm event not to be missed! We look forward to hosting you! Non-alcoholic drinks provided. Cash bar by Black Bird Bar Catering. $50 a person reserved in advance, $65 on the farm, special 10 reservations for $450. Children 6-10 $35., 6 and under free. East Tree Hill Farm, Plainfield                                                                                                     Edible Forest Garden Tour|1:00 pm – 3:00 pm | Come tour our 5 acre forest gardens and homestead. Plums, hardy kiwi, chestnuts and lots more in an ecologically rich and diverse context. Tasting is encouraged. The workshop will include tour and discussion of various elements on the farm, come prepared to be outside.
